Cutover

When hardware is publishing:

1. Confirm live readings with source mqtt/sensor, not simulator.
2. Set telemetryMode to live.
3. Simulator must stop for that company.
4. DEMO pill should not appear for that factory.
5. Status active (not paused).
6. Rotate any tokens that were used in a public workshop.

If MQTT is not yet flowing, do not switch to live just to “look production” — you will have a dark floor.
